Kashk is obtained by boiling, straining and drying Doogh (a traditional Persian drink made by mixing water, salt and yogurt). It is a valuable food that contains all the properties of milk. Kashk contains calcium, fat, salt, protein and Niacin vitamin (B3). 100 grams of Kashk can produce an energy of about 105 to 120 calories, which can be included in the daily diet as one of the sources of energy needed by the body. Traditional Kashk can contain substances harmful to human health because it is not produced in a completely hygienic and sterilized environment; therefore, the use of industrial Kashk produced in a hygienic environment is highly recommended. Kashk is used in a large variety of ways, ranging from flavoring and decorating a various number of dishes to consuming it as a delicious and nutritious snack.
